Cinnamon Oats - Blueberry Chia Jam

Servings: 2
Serving Size: 1 c. Oats ; 1/4 c. Chia Jam

Ingredients (Oats):
- 1/2 grated Zucchini
- 1/2 c. Old Fashioned Oats
- 1 c. Vanilla Almond Milk
- 1 c. Water
- 2 tsp. Cinnamon
- 2 tsp. Vanilla Extract
Ingredients (Jam):
- 1 c. Frozen Blueberries
- 1/8 c. Chia Seeds
- 1 tbsp. Lemon Juice
Directions (Oats):
1. Wash, dry, and grate a zucchini into a medium pot
2. Turn to medium high
3. Add oats, milk, water, cinnamon, and vanilla into the pot and bring to a boi
l 4. Once boiling, turn heat to low and simmer the oats for about 10-15 minutes until a thicker consistency forms. (Don't cook too long if storing in the fridge because the mixture will thicken over time)
5. Serve with jam.
Directions (Jam):
1. Place the frozen blueberries into a small saucepan over medium heat
2. Add the lemon juice
3. Once the blueberries are starting to defrost (about 5 minutes or so) add the chia seeds
4. Turn the heat to low and simmer until chia seeds have become soft and gel-like.
5. Serve with oats.
