Seasoned Zucchini Chips

Everyone loves to sit back and enjoy the satisfying crunch of potato chips, but not everyone wants the extra calories and fat. This recipe is a great alternative to snacking and provides that same great crunch with only 179 calories.

 



Yields: 1 serving


Ingredients:

- 1 Large Zucchini

- 1 tbsp. Olive Oil

-1/4 tsp. salt

-1/4 tsp. pepper

-1/4 tsp. onion powder

-1/2 tsp. paprika


 

Directions:

1. Preheat oven to 450 degrees


2. Wash and dry the zucchini and slice into thin chips. (Using a mandolin makes this process a lot easier)


3. In a larger mixing bowl, place zucchini chips and add the oil and seasonings


4. Mix until all of the zucchini is well coated


5. Line 2 baking sheets with parchment paper and place zucchini chips (ensure none of the chips are overlapping)


6. Bake for 12-15 minutes until zucchini develops brown spots and remove from oven


7. Reduce oven temperature to 200 degrees and bake zucchini for 20-40 more minutes

until the slices are crispy


8. Remove from the oven and cool


 

Tips:

- The chips baking on the edge of the pan will become much more crispy compared to the center. If possible, place majority of chips towards the edge, but make sure they don't overlap.


-The thinner the slices, the crispier they will become, but they will burn much more easily.
